Hydatidosis
People usually become infected by ingestion of egges in meat or by accidentally swallowing the tapeworm eggs passed in dog faeces. Human acts as an intermediate host. The eggs travel through the bloodstream, lodge in organs and form watery cysts full of tapeworm heads. Symptoms includes stomach upset, diarrhoea unexplained weight los,s swollen abdomen anaemia weakness and fatigue cough blood or the fluid from a ruptured cyst may be coughed up. Hydatid disease can be fatal without medical treatment. A heavily infested organ may fail or a cyst may rupture and cause a life-threatening allergic reaction (anaphylaxis).
Cysticercosis
Larval stages of most of the tape worms (cysts) get encysted in vrious parts of animal body. Therefore, ingestion of improperly cooked meat helps contrating tape worm infestations So far, six of the tapeworms infestation in humans is known. Among them, the bladders worms of T. solium from pork and T. saginata from beef, and D. latum from fish are transmitted through ingestion of infected food items.
Trichinellosis
It is caused by a nematode – Trichinella Spp. Infection occurs with the ingestion of raw or undercooked pork, wild boar and horse meat. Complications may include inflammation of heart muscles, CNS and lungs. The preventive strategy includes proper cooking of meat at at least 71°C.
Giardiasis
It is popularly known as Beaver Fever caused by the protozoan parasite – Giardia lamblia. Improper cooked or uncooked meat are the risk factors. Major symptoms includes diarrhea, abdominal pain, and weight loss.
Toxoplasmosis
It is caused by protozoan parasite – Toxoplasma gondii. Human suffer mostly symptoms less but swollen lymph nodes, febrile condition, sore throat, blurred vision and eye pain can be seen. Improper washing of hands after meat handling, and ingestion of undercooked contaminated meat are the major route of acquiring infestation. Cooking of meat at 63°C (thickest part of meat) and a rest time of 3 minutes before eating destroys encyted Toxoplasma.
Sarcocystosis
It is caused by – Sarcocystis hominis and S. suihominis. Man becomes infected by ingestion of beef or pork containing bradyzoited abd trachyzoites in cystic muscles.
